"Matcha tea in a fine, light green powder in an elegant 80 g tin.Matcha is a unique, one might say noble, type of green tea. Before harvesting, the tea bushes are covered with mats for several weeks to slow down their growth. During this process, the leaves release amino acids that give the tea a richer flavour and aroma and make it slightly sweeter than teas such as sencha. The leaves, which are pastel green in colour, are dried and grated. The resulting powder, the final form of matcha, is an ingredient in many wonderful Japanese desserts. It is also used to make a unique tea served at the Chanoyu tea ceremony.
Due to the consistency of matcha, it needs to be handled gently. The powder is so fine and light that a moment's inattention can cause a green cloud to form, which falls and splashes the tea all around.
With matcha we can make soft, creamy ice cream with a unique flavour and a beautiful green colour. It is not difficult to prepare and does not require special equipment - all you need is the desire, a little patience and a few ingredients. Recipe below.
Matcha tea flavoured ice cream
Ingredients for 4-6 servings:3/4 cup milk
3/4 cup good quality heavy cream
3 egg yolks
2/3 cup crystal sugar
2 tablespoons matcha green tea
Preparation:In a small bowl, mix the matcha green powder and 2 tablespoons of sugar. In a separate bowl, mix the remaining sugar with the yolks. Whisk the egg whites in a small bowl and whisk together the egg yolks in a small bowl.
